Super meat bowls

Unless you are an Eagles fan, I think it’s fair to say that Super Bowl 59 was the lamest Super Bowl of my lifetime. La la la LAME!

The most impressive part of Super Bowl hullabaloo in my opinion, was watching President Trump shake hands and greet fans before the game.

The entertainment was flat and blah. Where was the glitz and glam? Where was the value in showmanship and vocals? I was so disappointed.

On the bright side I did win the second quarter squares pot!!! CHA CHING!

Speaking of pot…I was pleasantly surprised by the positive reaction to my newly founded chipotle meatballs.

A healthy football dish I sort of thought up and whipped up. I ventured away from my classic dips and fried dishes to try something new.

At first, I had big dreams of hand making my own gluten free meatballs but I got lazy.

OK so here is what I did!

I dumped two bags of frozen turkey meatballs into my crockpot. Next I poured in two cans of verde enchilada sauce.

I added one can of chipotle peppers and green hatch chilies.

I chopped fresh onion, jalapeño and cilantro. Slow cook all of the ingredients on high for 3 hours and boom it’s ready to eat. It smells devine.

It’s a warm, spicy dish to serve for any occasion and it’s rich in protein.

You can serve it over a bowl of steamed rice or eat alone with tooth picks and chips.

The sauce was flavorful and bold. I actually saved it for taco dipping sauce.

Yummy and healthy.

Winner winner meatball dinner!

Love

Angi.
