Bringing Sweaty Back, I don't cook

I’m sooo over it.

I’m so over the FOOD!  

The food…  YIKES, the food.  

I have been on an overdue stay cation of sorts at my parents ranch. Yes, I still had to manage laundry, dishwasher and two square meals a day for baby girl, her friend and Mr. Chicken.   And guess what?   I’m over it.

For about 8 days I prepared and ate lots and lots of food.  Turkey and dressing!  Mashed potatoes and sweet potatoes.  Fried chicken and corn.  Spaghetti and turkey meat balls.  Hobo stew. (Which I might add is ridiculously easy to make, low cal and feeds for days)

Ok, I have also had, fudge, puppy chow, cookies, wine…did I mention wine!  Desert drinks consisting of Kaluha, Baileys and ice cream.  Kill me now.  I deserve about 1000 burpees for that one.  Hmm what else oh yeah black eyed peas, chips and every kind of dip known to man kind and yes….champagne.

I’m ready to take off the fluff.  I actually had a hard time zipping my jeans to drive home. Why did I even bother.  I had to make a run to the grocery story yesterday because we literally had nothing in our pantry or frig.  (the worst feeling ever)  I couldn’t even shop because nothing sounded good. Meanwhile, Mr. Chicken Fry was texting me his list which consisted of banana peppers, Grey Poupon, cookies, sour cream and onion chips, nectarines and butter.  (REALLY!!)  Don’t believe me…I have the text to prove it.

 

In any case, I stocked up on  eggs, fresh vegetables, fruit, brown rice, chicken breasts, pork tenderloin and other lean meats.  

Today is Monday y’all.  

Let’s party like its 2016!

HOBO STEW

what you will need:

bag of baby carrots, can of green beans, can of corn, 5 sliced up potatoes, 2 cans of Rotel (I like the cilantro spicy lime), onion, fresh cilantro, fresh garlic, two pounds of ground turkey, fresh jalapeno or serano peppers, can of chicken broth and 2 chicken bouillon cubes.  

Brown your turkey, I brown mine with garlic and onion for added flavor.

Dump all ingredients into a pot and add water if needed.  Bring to a boil for about 45 minutes then let simmer for additional 45 minutes or until vegetables are soft.  You can also slow cook this in a crock pot.  Season with Lawry’s seasoning salt, pepper and salt, cayenne and anything else you want.

Please share your low cal recipes…I’m really trying to be better in the kitchen.  I want to start cooking more and trying to enjoy the process.  Don’t give me anything to laborious but help a girl out!
