Better Than Chipotle

I don’t avoids carbs.

Carbohydrates are a way of life in my house.

While I’m careful to not overindulge one thing is for certain…I have a heart and stomach for carbs.

As does my beautiful baby girl teen queen who was breaking the bank with her passion and high maintenance taste for Chipotle. She was always raving about the rice and guacamole!

RICE! It’s rice! I can make rice.

I mean hello….guacamole isn’t any big deal its several avocados, tomatoes, cilantro, jalapeño and onion! I mean how hard can it be? Just add a little seasoning right???

When it came to the rice I admit I was skeptical and unsure.

I did what all good mothers do, I took a lot of eye rolling from my daughter which gave me the motivation to prove her wrong!!! It’s actually what I love for!!! I found a way to make the most amazing glorious healthy cilantro rice. It’s almost been a year in the perfecting stage but I’m nailing it now and you need to be in the know!

Why it took so long?!?

I started with brown rice and that folks I believe was my down fall. It was a major hitch in my getalong but I kept working. While I do think brown rice is better it just didn’t taste the same. It wasn’t as flavorful.

Therefore I suggest you begin with white rice. You can find white rice at any local grocery store or convenience store.

Ingredient

White rice

Cilantro

garlic (optional)

Onion (optional)

Swanson’s chicken broth

Bullion chicken and garlic cube

Begin by adding the chicken broth into the pan. So if I’m making 2 cups of rice you can use 2 cups of broth and 2 cups of water.

Add the rice and allow it to begin cooking. Chop up cilantro, (it doesn’t have to be finely chopped). That’s entirely up to you. I sometimes add a little bit of onion. I just put it in the rice as its cooking. Don’t forget to add the bouillon cube.

Allow the rice to boil then let it simmer on low until done.

You be the judge. I think I would give Chipotle a run for its money.

It cost about $1 to make a giant vat of this each week and the cooking time is less than 20 minutes. It’s a no brainer. It feeds a ton of people and you will be the hit at the Summer July 4th party.

 

It’s not a big deal but it’s mine to share with the world.  Because if I can cook fluffy flavorful rice that my daughter (the worst critic ever) likes…then it’s worth sharing.
